Lemon Balm and Lime Flower

I adore lemon balm, it has so many wonderful culinary uses. As the name suggests it has a citrus flavour and aroma. The leaves are good in green salads, scattered in fruit salads and I love to push a few stems into a bottle of white wine for 24 hours before serving in the summer time.

For Childrens and children lemon balms virtues are as relaxants, it is traditionally used to comfort over excited and irritable little ones. It combines well both in flavour and virtue with Lime Flowers which have a cooling effect and help settling down, herbalists call Lime a nervine for these properties.

I would not have been without this combination and found it a great day time drink for my children which with a little fruit juice was delicious as ice lollies in warm weather or if they had a raised temperature. We add a splash of apple to this infusion at First Thyme to compliment these refreshing flavours.

Lemon Balm will grow almost anywhere and we like to put it in a hanging basket with strawberry plants. Sunshine, with the chance of shade and some moisture is best.
